Recipe Time: Chicken Tacos

I thought I would share a recipe I tried out this week - it's a chicken taco recipe that I found in October's issue of FamilyFun. It turned out pretty good. I think next time, I will make a little more and use the left-over chicken for enchilada soup.

Ingredients:
1 T oil (I used olive oil, the recipe calls for vegetable oil)
1/2 cup minced onion
2 garlic cloves, minced
1 Serrano chili, minced (I used jalapenos and a chili)
1/2 cup tomato sauce
1 t cumin
1/2 t salt
3 1/2 cups shredded, cooked chicken
12 flour tortillas

Heat the oil in large skillet over medium heat. Add the onion, garlic, and chili and saute until the onion has softened, about 6 minutes. Add the tomato sauce, cumin, and salt and continue to cook for one more minute. Add the chicken and cook until heated through, about 2 minutes. Taste, and adjust the seasoning if necessary. Serve in warm tortillas with toppings of your choice.

Cayson's Halloween costume came in today so I had to try it on him. I think it is obvious that he was less than thrilled. He hated it! So, I am sending it back tomorrow. No monkey around here this year.

Post-blog notes

Dusty wanted me to be sure everyone knows that 30 is the new 20 so he is really just turning 20. He told me I need to post this so everyone knows.

Secondly, I forgot to mention about the below picture of Cayson on the Tonka truck - he insists that we remove the actual seat on it and he sits in the storage compartment... it's like sitting in a bucket.

Our Little Goober

Here are a few pictures from today... Cayson thought it would be convenient to steer his tractor while driving his Tonka truck. Logical in a toddler's head, I'm sure.
I went in to check on him tonight and this was his sleeping position - leg kicked up, arms above his head, laying in the middle of all his stuffed animals.

I have a MAID!!!!!


Fun Time in C-town

We attended a fabulous Princess birthday party for Princess Kaci's 4th birthday. It was a fun day - so great to see our family! Cayson had fun with his cousins... they really spoil him. At the end of the day, he was chasing Kaci & Korbyn and all three were squealing. The funniest part, Cayson's squeal was higher pitch and louder than the two girls'! It was too funny. Wish I had a video of that!

Birthday Shout-outs!

I'm behind on birthday shout-outs so I thought I'd do it today.... since I'm in the birthday mood - Dusty's 30th birthday is Friday (whoo-hoo) and we celebrated our niece's 4th birthday today.

Happy Birthday to.........
..... Jayce! Our adorable nephew who turned 9 on the 7th.
..... Greer! Her birthday was the 9th... as in, she entered the world and we now have 5 nieces.
..... Greg J! Dusty's brother's birthday was Friday the 19th.
..... Ashley! My baby cousin turned 18 today! I can't believe it... she's a woman... err... lady... I think she's still a little girl to me. Even though she can now vote and buy cigarettes. But don't you ever buy cigarettes, Missy.
.... Kaci! Our sweet baby niece turns 4 tomorrow. I guess she's not our baby niece now that Greer is here though.

Whew! As you can see, September is filled with lots of birthdays for our family. And let me remind you, Dusty's is FRIDAY! He will be the big 3-0!

Rough day around our house...

Things have been a little rough today... Dusty was up all Monday night and has been extremely sick. He was supposed to go back to work today but had to call in sick. I knew he was really, really sick when he called in sick- he never calls in sick... he goes in no matter what. He was in bed all day long... poor guy! He is starting to feel better, thank goodness! I just hope Cayson & I don't come down with it.

So, I thought I'd share a few pictures of my favorite 17 month old (soon to be 18 month old)! The backpack pictures are from yesterday - he looked ready for school! Dusty said he is not ever going to school - he is just going to be our sweet little boy forever. lol. This is his new bag from Grandma so I thought I'd take a couple pics.


Today, the guy was cracking us both up - he wanted to wear two hats at once! He stacked his Braves hat over the OU hat. He wore both hats for an hour or so until I took one off before we ran errands... don't want people to think we are complete weirdos. One other note, my wonderful sister-in-law joined the blogging world. You can see pics of my nieces & nephew on her blog (The Green Family).

Why not to use a free sippy

I tried to get a video because Cayson was testing a new free sippy cup and was completely soaked. Note to self: don't use sippies without valves. His clothes were drenched as was my coffee table. The water running down his face and neck and the puddles on my coffee table didn't show up in the poor quality video though.

Football Weekend

It's football season around our house! Friday night, Dusty and I went to the Weatherford High football game. Dusty was working security at the game, so I left Cayson with Grandma & Grandaddy. It was an extremely soggy football game. It has rained nearly non-stop since we've come home and it rained most of the game. Needless to say, it was very muddy, soggy, and kind of gross. :)

Saturday evening we went to the SWOSU football game. Cayson LOVED it. He was so fascinated by all the people, the football players, the cheerleaders, and the mascot. Every time he saw Brandy the Bulldog, he just pointed and jabbered. When she would walk away, he would wave goodbye for 5-10 minutes each time - no exaggeration here! He would squeal when he saw the football being thrown or kicked and start clapping. It was so fun to watch him enjoying himself so much. I tried to get a video of him, but it didn't turn out.






Okay, I got all our vacation photos loaded to my Flickr account - you can click on the link on the right side of the blog or on the little mosaic of pics. I got descriptions on most of them and have them organized. I have been lazy since getting home - I feel like we are still on vacation so I haven't typed out a blog detailing more of our trip... maybe tomorrow. Dusty goes back to work on Tuesday and for some reason, I feel like I should be on vacation till then too.... the laundry is piling up and the house is a dirty mess. Lol.
